Description

Transform a humble vegetable into a stunning dish with crispy edges, rich Parmesan, and a burst of garlic and lemon.


Ingredients

Scale
  • 1 head of Cauliflower, cut into florets
  • 3 tbsp Olive Oil
  • 3 cloves Fresh Garlic, minced
  • 1/2 cup Parmesan Cheese, freshly grated
  • Salt, to taste
  • Pepper, to taste
  • Zest of 1 Lemon

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into even-sized florets, rinse well, and dry thoroughly.
  3. In a large bowl, combine the florets, olive oil, minced garlic, salt, and pepper. Toss to coat.
  4. Spread the cauliflower on a baking sheet lined with parchment paper.
  5. Bake for 25 minutes, tossing halfway through.
  6. Sprinkle grated Parmesan over the cauliflower and return to the oven for an additional 5 minutes.
  7. Toss with lemon zest before serving.

Notes

Using a convection oven can enhance crispiness. Avoid crowding the pan to prevent steaming.
