- 2 cups mashed potatoes (preferably starchy, like russets)
- 1 cup shredded sharp cheddar or mozzarella cheese
- 1 large egg
- 2 cloves garlic, minced (or 1 teaspoon garlic powder)
- Panko or seasoned breadcrumbs for coating
- Fresh chives or parsley (optional)
- Salt and pepper to taste
Instructions
- Boil peeled, cubed potatoes in salted water until soft. Drain and mash with butter, milk, salt, and pepper to taste.
- In a mixing bowl, combine the mashed potatoes, shredded cheese, minced garlic, egg, and any optional add-ins. Mix until well-blended.
- With your hands, scoop out small portions of the mixture and form them into balls or patties.
- Roll each puff in breadcrumbs until fully coated.
- Heat oil in a skillet over medium heat and fry the puffs until golden brown, roughly 2-3 minutes per side.
- Remove from the skillet and let drain on paper towels. Serve warm.
Notes
Can be baked for a healthier option at 400°F for 20-25 minutes until golden. Avoid overcrowding the frying pan for best results.
