Ingredients

  • 2 fresh lemons
  • 4 cloves garlic
  • Fresh rosemary
  • Fresh thyme
  • Bell peppers
  • Red onions
  • Zucchini
  • Potatoes
  • Extra virgin olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken and pat dry.
  3. In a bowl, mix lemon juice, minced garlic, olive oil, rosemary, thyme, salt and pepper.
  4. Marinate the chicken in the mixture for at least 30 minutes.
  5. Chop the vegetables into equal sizes and toss with olive oil, salt, and pepper.
  6. Place the chicken and vegetables in a roasting pan.
  7. Roast for about 1 hour and 15 minutes, until the chicken is golden brown.
  8. Let the chicken rest for 10-15 minutes before carving and serve with vegetables.

Notes

For best flavor, marinate the chicken for up to 2 hours. Ensure not to overcrowd the pan while roasting.
