- 1 whole chicken (3–4 pounds)
- 2 fresh lemons
- 4 cloves garlic
- Fresh rosemary
- Fresh thyme
- Bell peppers
- Red onions
- Zucchini
- Potatoes
- Extra virgin olive oil
- Salt
- Pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken and pat dry.
- In a bowl, mix lemon juice, minced garlic, olive oil, rosemary, thyme, salt and pepper.
- Marinate the chicken in the mixture for at least 30 minutes.
- Chop the vegetables into equal sizes and toss with olive oil, salt, and pepper.
- Place the chicken and vegetables in a roasting pan.
- Roast for about 1 hour and 15 minutes, until the chicken is golden brown.
- Let the chicken rest for 10-15 minutes before carving and serve with vegetables.
Notes
For best flavor, marinate the chicken for up to 2 hours. Ensure not to overcrowd the pan while roasting.
