- 2–3 chipotle peppers in adobo sauce, chopped
- 10 corn tortillas
- 1 cup Oaxaca cheese, shredded (or Monterey Jack/Cotija)
- 1/4 cup fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Vegetable oil (for frying or baking)
- Lime wedges (for serving)
Instructions
- In a mixing bowl, combine the shredded chicken, chopped chipotle peppers, cumin, chopped cilantro, and a squeeze of lime. Mix until well incorporated.
- Heat a skillet over medium heat. Gently warm each tortilla for about 20 seconds on each side to make them pliable.
- Take a warmed tortilla and place a generous amount of filling down the center. Roll it up tightly, tucking in the ends.
- For frying, heat oil in a pan over medium-high heat. Fry the flautas seam-side down until golden brown and crispy, about 3-4 minutes per side. For baking, arrange the flautas on a baking sheet, brush with oil, and bake at 400°F for about 20 minutes or until crispy.
- Once golden, let them drain on paper towels and serve hot with salsa, guacamole, or sour cream.
- Enjoy with fresh lime wedges and additional cilantro!
