Delicious zucchini boats filled with seasoned chicken, marinara, and melted cheese, perfect for a family meal.

- 2 medium-sized zucchini
- 1 lb boneless, skinless chicken breast
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out the center to create boats.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the chicken, season with salt, pepper, and Italian herbs, and cook until golden.
- In a bowl, combine the cooked chicken with marinara sauce and half of the mozzarella cheese.
- Fill each zucchini half generously with the chicken mixture. Top with remaining mozzarella and a sprinkle of Parmesan.
- Place filled zucchini boats on a baking tray and bake for 25-30 minutes until the zucchini is tender and the cheese is bubbly.
- Allow to cool slightly before serving, garnished with extra marinara and fresh herbs.
Notes
For a vegetarian option, replace chicken with cooked lentils or finely chopped mushrooms. Make sure to use firm zucchinis to avoid watery boats.
