Creamy Turkey Stroganoff is a comforting classic made with tender turkey, sautéed mushrooms, and a rich sour cream sauce. It’s the perfect skillet dinner for cozy nights or using up leftovers.
Ingredients
1 lb turkey breast, sliced (or leftover roast turkey)
8 oz mushrooms, sliced (button or cremini)
1 onion, finely chopped
2 cloves garlic, minced
2 cups chicken broth
1 cup sour cream (or Greek yogurt)
2 tbsp butter
2 tbsp flour
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Melt butter in a skillet over medium heat. Add onions and garlic; cook until soft.
2. Add mushrooms and sauté until browned and tender.
3. Sprinkle flour over the vegetables and stir to form a roux.
4. Slowly whisk in the chicken broth. Simmer until thickened.
5. Add sliced turkey and stir to coat. Cook until heated through.
6. Lower heat and fold in sour cream until smooth and creamy.
7. Season with salt and pepper. Garnish with fresh parsley and serve.
Notes
Serve over pasta, rice, or mashed potatoes.
To lighten it, use Greek yogurt instead of sour cream.
Avoid boiling after adding the cream to prevent curdling.
