- 1 cup Orzo pasta
- 2 medium Chicken breasts
- 1 cup Sun-dried tomatoes, chopped
- 1 cup Heavy cream
- 3 cloves Garlic, minced
- 1 Shallot, minced
- 2 cups Chicken broth
- ½ cup Parmesan cheese, grated
- 2 tablespoons Olive oil
- 1 tablespoon Butter
- Fresh herbs (basil or thyme) to taste
Instructions
- Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
- Sauté Chicken: In a large skillet, heat olive oil and butter over medium-high heat. Season chicken breasts with salt and pepper, then add to the pan. Cook for about 6-7 minutes per side or until golden brown and fully cooked. Remove and let it rest, then slice thinly.
- Build the Flavor Base: In the same skillet, add the minced garlic and shallots. Stir for about 1-2 minutes or until fragrant.
- Add Sun-Dried Tomatoes: Toss in the chopped sun-dried tomatoes and cook for another minute.
- Create the Sauce: Pour in the chicken broth and bring to a simmer. Gradually stir in the heavy cream. Let the sauce thicken slightly.
- Combine It All: Stir in cooked orzo and sliced chicken, mixing until well coated. Add grated Parmesan and fresh herbs, stirring to combine.
- Serve and Enjoy: Plate the dish and garnish with additional herbs and cheese if desired.
