- 2 pounds Yukon Gold or Russet potatoes
- 1 head roasted garlic
- ½ cup unsalted butter
- 1 cup heavy cream
- 1 pound breakfast sausage
- ¼ cup all-purpose flour
- 2 cups milk
- Salt and pepper to taste
- Fresh herbs (thyme, rosemary) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the top off a whole garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Peel and cube the potatoes, place in salted boiling water, and cook until tender, approximately 15-20 minutes.
- Drain and return the potatoes to the pot. Squeeze the roasted garlic into the potatoes, add butter and cream, and mash until creamy. Season with salt and pepper.
- In a skillet, cook the sausage over medium heat until browned, crumbling it as it cooks.
- Add flour to the skillet with sausage; stir for a minute.
- Gradually stir in milk and cook until the gravy thickens, seasoning with salt and pepper.
- Spoon mashed potatoes onto a plate and drizzle with sausage gravy. Garnish with fresh herbs.
Notes
For fluffier potatoes, consider steaming instead of boiling. Always use warmed cream and butter for better incorporation.
