Ingredients

- 2 large starchy potatoes (Russets or Yukon Golds)
- 2 cups chopped kale (Tuscan or spinach as a substitute)
- 4 slices bacon (or smoked paprika for a vegetarian version)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream (or half-and-half or coconut cream as a substitute)
- 2 tablespoons butter (or olive oil for a lighter version)
- Salt and pepper, to taste
Instructions
- Prepare the Ingredients: Chop the potatoes, kale, onions, and garlic. Mince the bacon.
- Cook the Bacon: In a large pot, cook the bacon over medium heat until crispy. Reserve some bacon for topping the soup later.
- Sauté the Aromatics: Add the chopped onions and minced garlic to the bacon drippings and sauté until translucent.
- Simmer the Potatoes: Stir in the chopped potatoes and cover them with vegetable or chicken broth. Bring to a boil and then reduce to simmer until the potatoes are tender, about 15-20 minutes.
- Blend for Creaminess: Using an immersion blender, puree the mixture until smooth. Alternatively, transfer it to a blender in batches.
- Add Kale and Cream: Stir in the kale and heavy cream, cooking until the kale wilts. Season with salt and pepper to taste.
- Serve and Garnish: Ladle into bowls and garnish with crispy bacon and a drizzle of olive oil.
Notes
For a chunkier soup, reserve some potato chunks. Taste and adjust seasoning as needed.
