- Fettuccine or penne pasta
- 1 lb lean ground beef
- 8 oz baby bella or cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1 medium sweet onion, chopped
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- Fresh parsley or thyme, for garnish
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted water until al dente, reserving 1 cup of pasta water before draining.
- In a large skillet, melt the butter and olive oil over medium heat. Add the onions and sauté until translucent, about 3–4 minutes. Stir in the garlic and cook for 1 more minute.
- Add the ground beef and cook until browned, about 6–8 minutes. Drain excess fat if necessary.
- Toss in the mushrooms and cook until tender, about 5 minutes. Season with salt and pepper.
- Lower the heat, pour in the heavy cream, and let it simmer, adjusting the thickness with reserved pasta water as needed.
- Add the drained pasta, mixing well to coat in the sauce. Stir in the Parmesan cheese and fresh herbs until melted and combined.
- Plate the dish and garnish with additional herbs and Parmesan before serving.
Notes
For a lighter version, substitute lean ground beef with ground turkey or a meat alternative. You can also add spinach or kale for extra nutrition.
