  • Fresh Spinach (or frozen, drained)
  • Feta Cheese (or ricotta/goat cheese for milder taste)
  • Heavy Cream (or full-fat coconut milk for dairy-free)
  • Garlic (fresh or dried)
  • Butter
  • Olive Oil

Instructions

  1. Cook the gnocchi in a large pot of boiling salted water until they float. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add spinach and cook until wilted. Season with salt and pepper.
  3. Add butter to the skillet and allow it to melt. Pour in the heavy cream, stirring continuously, and mix in crumbled feta until creamy.
  4. Fold the cooked gnocchi into the sauce, adding reserved gnocchi water if needed for consistency.
  5. Taste and adjust seasoning with salt, pepper, and lemon juice. Serve immediately topped with cracked black pepper.
