- 8 ounces fettuccine or spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 8 ounces mushrooms, sliced (cremini or button)
- 1 can (14 ounces) chopped tomatoes
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional)
- Fresh basil or parsley for garnish
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
- In a skillet, heat olive oil over medium heat and sauté garlic for 1 minute until fragrant.
- Add mushrooms to the skillet and cook until golden brown and tender.
- Stir in the chopped tomatoes and bring to a simmer. Add heavy cream and thicken the sauce for about 5 minutes on low heat.
- Mix in the drained pasta, adding reserved pasta water as needed to achieve desired consistency. Finish with fresh herbs before serving.
Notes
For extra flavor, top with grated Parmesan cheese before serving. Avoid boiling the cream once added to the sauce.
