Instructions
- Prep the ingredients: Slice your potatoes uniformly to ensure even cooking.
- Caramelize the onions: In a large skillet, melt butter over medium heat and add sliced onions with a pinch of salt. Cook until golden and caramelized, about 25 minutes.
- Make the creamy sauce: In a saucepan, combine heavy cream, stock, salt, pepper, and herbs. Heat gently without boiling and add half the cheese, stirring until melted.
- Layer it up: In a greased baking dish, layer potatoes and caramelized onions alternately. Pour the creamy sauce over the top, covering the layers well.
- Bake: Cover with foil and bake at 350°F (175°C) for about 45 minutes. Uncover, sprinkle remaining cheese, and bake an additional 20-30 minutes until bubbly and golden.
- Rest and serve: Let it sit for 10-15 minutes before serving to allow the layers to set.
Notes
For a lighter option, use half-and-half instead of heavy cream. Substitute with sautéed mushrooms for an earthy twist.
