Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1 cup cremini mushrooms, sliced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish
  • Grated Parmesan for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Season the chicken breasts with salt, pepper, and Cajun seasoning. Sauté for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let it rest before slicing.
  3. In the same skillet, add the diced onion and bell pepper, stirring until softened. Toss in the sliced mushrooms and cook until they become beautifully tender.
  4. Pour the heavy cream into the skillet, stirring to combine all ingredients. Bring to a gentle simmer, allowing the cream to thicken slightly. Add in more Cajun seasoning if desired.
  5. Toss the cooked pasta into the sauce, coating it evenly. Slice the chicken and lay it atop the creamy pasta, garnishing with chopped parsley and freshly grated Parmesan.
  6. Serve hot with a side salad or crusty bread.

Notes

For a vegetarian twist, substitute chicken with firm tofu or use a variety of seasonal vegetables. Gluten-free pasta can be used without compromising flavor.
