- 2 boneless, skinless chicken breasts
- 8 ounces fettuccine pasta
- 1 cup heavy cream
- 1 cup cremini mushrooms, sliced
- 1 green bell pepper, diced
- 1 small onion, diced

- Salt and pepper, to taste
- Fresh parsley, chopped for garnish

Instructions
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Season the chicken breasts with salt, pepper, and Cajun seasoning. Sauté for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let it rest before slicing.
- In the same skillet, add the diced onion and bell pepper, stirring until softened. Toss in the sliced mushrooms and cook until they become beautifully tender.
- Pour the heavy cream into the skillet, stirring to combine all ingredients. Bring to a gentle simmer, allowing the cream to thicken slightly. Add in more Cajun seasoning if desired.
- Toss the cooked pasta into the sauce, coating it evenly. Slice the chicken and lay it atop the creamy pasta, garnishing with chopped parsley and freshly grated Parmesan.
- Serve hot with a side salad or crusty bread.
Notes
For a vegetarian twist, substitute chicken with firm tofu or use a variety of seasonal vegetables. Gluten-free pasta can be used without compromising flavor.
