- 4 cups fresh broccoli florets
- 2 cups shredded cheddar cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 tablespoon butter
Instructions
- Cut the broccoli into small florets.
- Melt the butter in a large pot over medium heat, add onion and garlic, and sauté until softened, about 3-5 minutes.
- Add broccoli florets and stems, stir, and cook for another 4-5 minutes.
- Pour in broth, bring to a simmer, and cook for about 15 minutes until broccoli is tender.
- Blend the soup until smooth using an immersion blender or in batches in a regular blender.
- Return to heat, stir in cheddar cheese and cream until melted.
- Season with salt, pepper, and serve hot.
Notes
For extra flavor, add cheese rind while simmering. Remove before blending.
