Description

A comforting and creamy broccoli cheddar soup that captures the warmth of home, perfect for chilly evenings.


Ingredients

Scale
  • 4 cups fresh broccoli florets
  • 2 cups shredded cheddar cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 tablespoon butter

Instructions

  1. Cut the broccoli into small florets.
  2. Melt the butter in a large pot over medium heat, add onion and garlic, and sauté until softened, about 3-5 minutes.
  3. Add broccoli florets and stems, stir, and cook for another 4-5 minutes.
  4. Pour in broth, bring to a simmer, and cook for about 15 minutes until broccoli is tender.
  5. Blend the soup until smooth using an immersion blender or in batches in a regular blender.
  6. Return to heat, stir in cheddar cheese and cream until melted.
  7. Season with salt, pepper, and serve hot.

Notes

For extra flavor, add cheese rind while simmering. Remove before blending.
