Ingredients

Instructions
1. Shuck the corn and slice the kernels off the cob. If using frozen corn, thaw and measure 4 cups.
2. Melt butter in a large skillet over medium heat. Add diced onions or garlic if using and sauté for 3–4 minutes until soft.
3. Add the corn and stir well to coat with the butter. Cook for about 5 minutes, stirring occasionally.
4. Pour in the heavy cream, add sugar, and season with salt. Stir to combine and bring to a gentle simmer.
5. Let the mixture cook for 10–15 minutes, stirring occasionally, until it thickens to a creamy consistency.
6. Season with black pepper, adjust salt and sugar to taste, and finish with a pat of butter or fresh herbs if desired.

Notes
You can substitute heavy cream with coconut cream or cashew cream for a dairy-free version that still tastes rich and smooth.
Frozen corn works well when fresh isn’t available, just be sure to thaw it first for even cooking.
