Ingredients

  • 1 pie crust (store-bought or homemade)
  • 8 oz brie cheese, sliced
  • 2 cups fresh cranberries
  • 4 oz pancetta, diced
  • 2 tsp fresh thyme, chopped (or 1 tsp dried thyme)
  • 2 tbsp honey
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your tart crust: Roll out the dough, press it into a tart pan, and poke small holes with a fork.
  3. Cook the pancetta in a skillet over medium heat until crispy, then drain on paper towels.
  4. In a bowl, mix fresh cranberries, honey, and thyme.
  5. Layer brie slices in the tart crust, followed by the cranberry mixture and pancetta.
  6. Brush the crust with the beaten egg.
  7. Bake for 25-30 minutes until golden and bubbly.
  8. Cool for a few minutes before serving.

Notes

For extra flavor, consider adding orange zest to the cranberry mixture. Leave the brie rind on for a rustic touch.
