Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup dried cranberries
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the eggs, one at a time, and mix well.
  3. In a separate bowl, mix the flour and baking powder. Gradually add this to the wet mixture, folding until just combined.
  4. Gently fold in the dried cranberries.
  5. Pour the mixture into the prepared pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  6. While the bars cool, beat together the cream cheese, powdered sugar, and orange zest until smooth and creamy.
  7. Once the bars are completely cool, spread the cream cheese frosting generously across the top.
  8. Allow the frosting to set before slicing into squares. Enjoy!
