- 8 large eggs
- 2 cups of shredded cheddar cheese
- 1 pound of crispy bacon, chopped
- 2 cups of diced mushrooms (button or cremini)
- 1 cup of milk
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- ½ cup of sliced green onions
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the bacon until crispy. In the rendered fat, sauté the mushrooms until tender, about 5 minutes.
- In a large bowl, whisk together the eggs, milk, salt, and black pepper. Stir in the shredded cheese, half of the green onions, cooked bacon, and sautéed mushrooms.
- Pour the mixture into a greased 9×13 inch baking dish, spreading evenly.
- Bake for 30-35 minutes until the center is set and the top is golden brown.
- Allow the casserole to cool slightly before slicing.
Notes
For added flavor, sprinkle red pepper flakes before baking. Serve with fresh fruit salad or biscuits for a delightful breakfast.
