Ingredients

  • 8 large eggs
  • 2 cups of shredded cheddar cheese
  • 1 pound of crispy bacon, chopped
  • 2 cups of diced mushrooms (button or cremini)
  • 1 cup of milk
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • ½ cup of sliced green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon until crispy. In the rendered fat, sauté the mushrooms until tender, about 5 minutes.
  3. In a large bowl, whisk together the eggs, milk, salt, and black pepper. Stir in the shredded cheese, half of the green onions, cooked bacon, and sautéed mushrooms.
  4. Pour the mixture into a greased 9×13 inch baking dish, spreading evenly.
  5. Bake for 30-35 minutes until the center is set and the top is golden brown.
  6. Allow the casserole to cool slightly before slicing.

Notes

For added flavor, sprinkle red pepper flakes before baking. Serve with fresh fruit salad or biscuits for a delightful breakfast.
