A warm, comforting lasagna soup infused with rich flavors of tomatoes and herbs, perfect for chilly evenings.
Ingredients

- 1 lb Ground meat (beef, pork, or turkey)
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 can (28 oz) Crushed tomatoes
- 4 cups Beef or vegetable broth
- 8 oz Lasagna noodles, broken into pieces
- 1 cup Ricotta cheese
- 1 cup Mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 tsp Fresh basil, chopped
- 1 tsp Oregano
- Salt and pepper to taste
Instructions
- Chop onions and mince garlic. Break lasagna noodles into smaller pieces.
- In a skillet, heat some olive oil over medium heat. Add onions and cook until translucent. Stir in minced garlic and cook for another minute until fragrant.
- Add ground meat to the skillet. Season with salt and pepper. Cook until browned, breaking it apart with a wooden spoon.
- Transfer the meat mixture to your slow cooker. Add crushed tomatoes, broth, herbs, and broken pasta. Stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 15 minutes of cooking, dollop ricotta and sprinkle mozzarella on top, allowing it to melt into the soup.
- Once cooked, serve hot, garnished with fresh basil and a sprinkle of Parmesan.
Notes
Adjust liquid levels based on desired soup thickness; you can add more broth if needed. Feel free to add extra vegetables like spinach or zucchini.
