Description

A warm, comforting lasagna soup infused with rich flavors of tomatoes and herbs, perfect for chilly evenings.


Ingredients

  • 1 lb Ground meat (beef, pork, or turkey)
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can (28 oz) Crushed tomatoes
  • 4 cups Beef or vegetable broth
  • 8 oz Lasagna noodles, broken into pieces
  • 1 cup Ricotta cheese
  • 1 cup Mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Fresh basil, chopped
  • 1 tsp Oregano
  • Salt and pepper to taste

Instructions

  1. Chop onions and mince garlic. Break lasagna noodles into smaller pieces.
  2. In a skillet, heat some olive oil over medium heat. Add onions and cook until translucent. Stir in minced garlic and cook for another minute until fragrant.
  3. Add ground meat to the skillet. Season with salt and pepper. Cook until browned, breaking it apart with a wooden spoon.
  4. Transfer the meat mixture to your slow cooker. Add crushed tomatoes, broth, herbs, and broken pasta. Stir well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. In the last 15 minutes of cooking, dollop ricotta and sprinkle mozzarella on top, allowing it to melt into the soup.
  7. Once cooked, serve hot, garnished with fresh basil and a sprinkle of Parmesan.

Notes

Adjust liquid levels based on desired soup thickness; you can add more broth if needed. Feel free to add extra vegetables like spinach or zucchini.
