Ingredients

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • Pinch of salt
  • 1 cup pumpkin puree
  • 2 cups milk (whole, almond, or oat)
  • 2 beaten eggs
  • 1/2 cup brown sugar (or honey/maple syrup)
  • Chopped nuts or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine oats, cinnamon, nutmeg, ginger, and salt.
  3. In a separate bowl, whisk together pumpkin puree, milk, and beaten eggs until smooth.
  4. Gradually mix the wet ingredients into the dry mixture, folding in the brown sugar.
  5. Spread the mixture evenly in a greased 8×8 baking dish. Sprinkle chopped walnuts or dried cranberries on top.
  6. Bake for 30-35 minutes, until the top is golden and the mixture is set.
  7. Allow it to cool for a few minutes before serving, and enjoy warm with a drizzle of maple syrup.

Notes

For a vegan version, substitute eggs with flaxseed meal or chia seeds mixed with water, and use almond or oat milk.
