- 2 cups rolled oats
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- Pinch of salt
- 1 cup pumpkin puree
- 2 cups milk (whole, almond, or oat)
- 2 beaten eggs
- 1/2 cup brown sugar (or honey/maple syrup)
- Chopped nuts or dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine oats, cinnamon, nutmeg, ginger, and salt.
- In a separate bowl, whisk together pumpkin puree, milk, and beaten eggs until smooth.
- Gradually mix the wet ingredients into the dry mixture, folding in the brown sugar.
- Spread the mixture evenly in a greased 8×8 baking dish. Sprinkle chopped walnuts or dried cranberries on top.
- Bake for 30-35 minutes, until the top is golden and the mixture is set.
- Allow it to cool for a few minutes before serving, and enjoy warm with a drizzle of maple syrup.
Notes
For a vegan version, substitute eggs with flaxseed meal or chia seeds mixed with water, and use almond or oat milk.
