A heartwarming beef stew made in a crockpot, perfect for cold winter nights and family gatherings.
Ingredients
- Beef chuck roast (2-3 pounds)
- Carrots (3-4 large, sliced)
- Potatoes (2-3 medium, cubed)
- Celery stalks (2, sliced)
- Onions (1 large, chopped)
- Garlic (3-4 cloves, minced)
- Beef broth (4 cups)
- Red wine (1 cup, optional)
- Tomato paste (2 tablespoons)
- Fresh thyme, rosemary, bay leaf (to taste)
- Salt and pepper (to taste)
Instructions
- Trim excess fat from the beef and cut it into 1-2 inch cubes. Season generously with salt and pepper.
- Optional: Sear the beef in a skillet until browned on all sides for added flavor.
- Place the beef (browned or raw) in a crockpot. Add chopped onions, minced garlic, sliced carrots, cubed potatoes, and celery.
- Whisk together beef broth, red wine, tomato paste, and herbs in a bowl. Pour mixture over the meat and vegetables.
- Cover and cook on low for 7-8 hours, or high for 4-5 hours, until beef is tender.
- Taste and adjust seasonings. For a thicker stew, mix cornstarch with water and stir it in, cooking for an additional 30 minutes.
- Ladle stew into bowls and garnish with fresh herbs. Serve with rustic bread.

Always let the stew cool completely before storing. It brings out even more flavor when reheated!
