Description

A heartwarming beef stew made in a crockpot, perfect for cold winter nights and family gatherings.


Ingredients

  • Beef chuck roast (2-3 pounds)
  • Carrots (3-4 large, sliced)
  • Potatoes (2-3 medium, cubed)
  • Celery stalks (2, sliced)
  • Onions (1 large, chopped)
  • Garlic (3-4 cloves, minced)
  • Beef broth (4 cups)
  • Red wine (1 cup, optional)
  • Tomato paste (2 tablespoons)
  • Fresh thyme, rosemary, bay leaf (to taste)
  • Salt and pepper (to taste)

Instructions

  1. Trim excess fat from the beef and cut it into 1-2 inch cubes. Season generously with salt and pepper.
  2. Optional: Sear the beef in a skillet until browned on all sides for added flavor.
  3. Place the beef (browned or raw) in a crockpot. Add chopped onions, minced garlic, sliced carrots, cubed potatoes, and celery.
  4. Whisk together beef broth, red wine, tomato paste, and herbs in a bowl. Pour mixture over the meat and vegetables.
  5. Cover and cook on low for 7-8 hours, or high for 4-5 hours, until beef is tender.
  6. Taste and adjust seasonings. For a thicker stew, mix cornstarch with water and stir it in, cooking for an additional 30 minutes.
  7. Ladle stew into bowls and garnish with fresh herbs. Serve with rustic bread.

Notes

Always let the stew cool completely before storing. It brings out even more flavor when reheated!
