Description

A delightful marriage of rustic flavors and classic Italian cooking, featuring succulent shrimp in a buttery garlic sauce with earthy mushrooms.

Ingredients

Scale
  • 1 lb large deveined shrimp
  • 8 oz mushrooms (button or shiitake), sliced
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Start with a clean workspace. Rinse and pat dry your shrimp. If using mushrooms, slice them thinly. Chop your fresh herbs and set them aside.
  2. In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Toss in sliced mushrooms, red pepper flakes, and smoked paprika. Cook for 5-7 minutes until mushrooms become tender.
  4. Add the shrimp to the skillet and cook for approximately 3-5 minutes until they are pink and opaque.
  5. Squeeze fresh lemon juice, add herbs, and give everything a gentle toss. Adjust seasoning if needed.
  6. Transfer the Cowboy Scampi to plates and garnish with additional herbs. Serve warm.

Notes

For extra depth, serve with crusty bread to soak up the buttery sauce or a side of seasonal vegetables.
