- 1 lb large deveined shrimp
- 8 oz mushrooms (button or shiitake), sliced
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon red pepper flakes
- 1 teaspoon smoked paprika
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Start with a clean workspace. Rinse and pat dry your shrimp. If using mushrooms, slice them thinly. Chop your fresh herbs and set them aside.
- In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant.
- Toss in sliced mushrooms, red pepper flakes, and smoked paprika. Cook for 5-7 minutes until mushrooms become tender.
- Add the shrimp to the skillet and cook for approximately 3-5 minutes until they are pink and opaque.
- Squeeze fresh lemon juice, add herbs, and give everything a gentle toss. Adjust seasoning if needed.
- Transfer the Cowboy Scampi to plates and garnish with additional herbs. Serve warm.
