- 2 cups cooked chicken, shredded
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1 cup mushrooms, sliced (button or cremini)
- 4 cloves fresh garlic, minced (or 1 tablespoon dried garlic)
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Boil a large pot of salted water and cook linguine until it is al dente. Drain, reserving a bit of pasta water for the sauce.
- Heat olive oil and butter in a large skillet. Add the mushrooms and sauté until golden brown and fragrant, about 5 minutes.
- Stir in the garlic and cook for another minute, ensuring it does not burn.
- Pour in the chicken broth and cream, stirring gently. Let it simmer until the sauce thickens slightly—approximately 5 minutes.
- Add the shredded chicken to the skillet, stirring to coat all pieces in the creamy mixture. Season with salt and pepper.
- Add the cooked linguine to the skillet. If needed, add a splash of the reserved pasta water to reach the desired sauce consistency. Toss everything to combine, then transfer to a serving dish, garnishing with fresh parsley.
