- 4 cod fillets
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- Salt and pepper, to taste
- Red pepper flakes, optional
Instructions
- Prep your ingredients by washing and halving the cherry tomatoes, mincing the garlic, and chopping the herbs.
- Heat olive oil in a large skillet over medium-high heat. Season cod fillets with salt and pepper. Sear for 4-5 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until cooked through. Remove and keep warm.
- In the same skillet, sauté garlic until fragrant, then add cherry tomatoes and cook for 5-7 minutes until softened.
- Stir in chopped herbs and red pepper flakes. Nestle the cod fillets back into the sauce for a minute to absorb the flavors.
- Plate the dish and garnish with additional herbs if desired.
