Instructions
- Prepare the ingredients by chopping scallions, garlic, ginger, and mushrooms finely. Gather your herbs and set them aside.
- In a large bowl, combine ground chicken, coconut milk, breadcrumbs, egg, chopped mushrooms, garlic, ginger, scallions, cilantro, and the spices. Mix gently until well combined.
- Lightly grease your hands and shape the mixture into 1-inch meatballs, placing them on a baking sheet.
- For baking, preheat oven to 375°F (190°C) and bake meatballs for 20-25 minutes until golden. For frying, heat oil in a skillet over medium heat and cook for 3-4 minutes per side until browned.
- Serve hot, drizzled with sauce, or over rice.
