Instructions

  1. Prepare the ingredients by chopping scallions, garlic, ginger, and mushrooms finely. Gather your herbs and set them aside.
  2. In a large bowl, combine ground chicken, coconut milk, breadcrumbs, egg, chopped mushrooms, garlic, ginger, scallions, cilantro, and the spices. Mix gently until well combined.
  3. Lightly grease your hands and shape the mixture into 1-inch meatballs, placing them on a baking sheet.
