Ingredients

  • 23 cloves garlic, minced
  • 1/3 cup flour
  • 23 cups chicken or turkey stock
  • Fresh or dried sage, thyme, and parsley to taste
  • Salt and pepper to season
  • Optional: mushrooms for added umami flavor

Instructions

  1. Melt 1/4 cup of butter in a skillet over medium heat. Add the chopped giblets and sauté until browned, about 5-7 minutes.
  2. Stir in the onion and garlic, cooking until translucent, approximately 3-4 minutes.
  3. Sprinkle in the flour, stirring continuously for 2-3 minutes until the mixture is golden and bubbly.
  4. Gradually whisk in the chicken or turkey stock, ensuring there are no lumps. Continue to stir until the gravy thickens.
  5. Add herbs, salt, and pepper to taste. For extra depth of flavor, consider adding a splash of soy sauce or Worcestershire sauce.
  6. Let the gravy simmer for 10-15 minutes, stirring occasionally. If it thickens too much, stir in additional stock. Taste and adjust seasonings as necessary.
