Ingredients

  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup jam or preserves of your choice (raspberry, apricot, or strawberry work beautifully)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Stir in the vanilla extract until well blended.
  4. Gradually add the all-purpose flour and salt, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheet.
  6. Press your thumb or the back of a spoon in the center of each ball to create an indentation.
  7. Spoon a small amount of your chosen jam into each thumbprint.
  8. Bake for 12–15 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes if it feels too soft to handle. Store in an airtight container for up to a week, or freeze for up to three months.
