- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup jam or preserves of your choice (raspberry, apricot, or strawberry work beautifully)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Stir in the vanilla extract until well blended.
- Gradually add the all-purpose flour and salt, mixing until just combined.
- Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheet.
- Press your thumb or the back of a spoon in the center of each ball to create an indentation.
- Spoon a small amount of your chosen jam into each thumbprint.
- Bake for 12–15 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes if it feels too soft to handle. Store in an airtight container for up to a week, or freeze for up to three months.
