- 2 lbs chuck roast, diced
- 1 cup carrots, chopped
- 1 cup peas
- 1 cup potatoes, diced
- 1 cup mushrooms (optional)
- 1 onion, diced
- 2 cups beef broth
- 1 cup red wine
- 1/2 cup heavy cream
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- 1 pie crust (store-bought or homemade)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until golden brown.
- Add the beef, season with salt, pepper, and Worcestershire sauce. Brown the beef well.
- Stir in chopped carrots, peas, and mushrooms; sauté until tender.
- Pour in beef broth and red wine; let simmer until thickened. Add heavy cream and herbs, then remove from heat.
- If making your own crust, blend flour and cold butter until coarse. Add water until dough holds together.
- Preheat oven to 400°F (200°C).
- Roll out dough for pie dish and pour in the filling. Roll out top crust and seal the edges, cutting slits for steam.
- Brush top with egg wash and bake for 30-35 minutes until golden brown.
- Let it cool slightly before serving.
