Ingredients

  • 2 lbs chuck roast, diced
  • 1 cup carrots, chopped
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1 cup mushrooms (optional)
  • 1 onion, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 1/2 cup heavy cream
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 1 pie crust (store-bought or homemade)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until golden brown.
  2. Add the beef, season with salt, pepper, and Worcestershire sauce. Brown the beef well.
  3. Stir in chopped carrots, peas, and mushrooms; sauté until tender.
  4. Pour in beef broth and red wine; let simmer until thickened. Add heavy cream and herbs, then remove from heat.
  5. If making your own crust, blend flour and cold butter until coarse. Add water until dough holds together.
  6. Preheat oven to 400°F (200°C).
  7. Roll out dough for pie dish and pour in the filling. Roll out top crust and seal the edges, cutting slits for steam.
  8. Brush top with egg wash and bake for 30-35 minutes until golden brown.
  9. Let it cool slightly before serving.
