Ingredients
- Fresh clams (or canned if in a pinch)
- Bacon (4-6 slices)
- Potatoes (2 cups, Yukon Gold or Russets)
- Onion (1, diced)
- Garlic (2 cloves, minced)
- Heavy cream (2 cups)
- Thyme (fresh or dried)
- Salt and pepper (to taste)
Instructions
- Prepare the clams: If using fresh clams, rinse and steam them until they open. Discard any that stay closed. Chop and set aside.
- Cook the bacon: In a large pot or Dutch oven, cook bacon over medium heat until crispy. Remove and drain, leaving the drippings.
- Sauté the base: Add diced onion and minced garlic to the pot. Sauté until fragrant and translucent.
- Incorporate the potatoes: Add diced potatoes and cover with water or broth. Season lightly with salt and pepper. Cook until tender (about 15-20 minutes).
- Add the clams: Stir in the chopped clams and their juices. Let simmer for about 5 minutes.
- Cream it up: Reduce heat to low and pour in heavy cream. Stir gently. Season with thyme, salt, and pepper to taste.
- Final touches: Add crispy bacon back into the pot before serving. Garnish with fresh parsley for color.

Notes
For substitutions, turkey bacon or diced ham can replace bacon, and cauliflower can be used instead of potatoes for a low-carb option.
