Description

Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 packs (16 oz) cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup brown sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine crushed graham crackers, melted butter, and granulated sugar in a bowl. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Allow to cool.
  3. Beat cream cheese until creamy, then add granulated sugar, sour cream, vanilla extract, and eggs, mixing until combined.
  4. Mix brown sugar and cinnamon in a separate bowl to create the cinnamon swirl.
  5. Pour half of the cheesecake filling over the cooled crust, then drop spoonfuls of the cinnamon mixture over it and swirl gently.
  6. Add the remaining cheesecake filling on top and finish with another swirl of cinnamon mixture.
  7. Bake in a water bath for 60-70 minutes until slightly jiggly. Turn off the oven and let cool gradually.
  8. Chill in the refrigerator for at least 4 hours before serving.
  9. Remove from the pan and serve with whipped cream and caramel sauce.
