- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 2 packs (16 oz) cream cheese, softened
- 1 cup granulated sugar
- ½ cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- ½ cup brown sugar
- 2 teaspoons cinnamon
Instructions
- Preheat the oven to 325°F (160°C).
- Combine crushed graham crackers, melted butter, and granulated sugar in a bowl. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Allow to cool.
- Beat cream cheese until creamy, then add granulated sugar, sour cream, vanilla extract, and eggs, mixing until combined.
- Mix brown sugar and cinnamon in a separate bowl to create the cinnamon swirl.
- Pour half of the cheesecake filling over the cooled crust, then drop spoonfuls of the cinnamon mixture over it and swirl gently.
- Add the remaining cheesecake filling on top and finish with another swirl of cinnamon mixture.
- Bake in a water bath for 60-70 minutes until slightly jiggly. Turn off the oven and let cool gradually.
- Chill in the refrigerator for at least 4 hours before serving.
- Remove from the pan and serve with whipped cream and caramel sauce.
