Ingredients

  • ½ cup unsweetened cocoa powder
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • Jam or preserves (raspberry, apricot, or preferred flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg yolk and vanilla extract, stirring until well combined.
  3. Sift together the flour and cocoa powder, then gradually fold this mixture into the butter mixture until fully combined. The dough should be soft but not sticky.
  4. Scoop out tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheets, spaced about 2 inches apart.
  5. Gently press your thumb into the center of each dough ball to create a well.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges are firm but the center remains soft. Allow to cool for 5 minutes before transferring to a wire rack.
  7. Fill each indentation with your favorite jam once cooled.
