- ½ cup unsweetened cocoa powder
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- Jam or preserves (raspberry, apricot, or preferred flavor)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg yolk and vanilla extract, stirring until well combined.
- Sift together the flour and cocoa powder, then gradually fold this mixture into the butter mixture until fully combined. The dough should be soft but not sticky.
- Scoop out tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheets, spaced about 2 inches apart.
- Gently press your thumb into the center of each dough ball to create a well.
- Bake in the preheated oven for 10-12 minutes, or until the edges are firm but the center remains soft. Allow to cool for 5 minutes before transferring to a wire rack.
- Fill each indentation with your favorite jam once cooled.

For a dairy-free version, substitute butter with coconut oil. Ensure butter is at room temperature before starting.
