- 2 cups milk (whole or a mix of cream and whole)
- 2 egg yolks
- 1 teaspoon vanilla extract
Instructions
- Gather all your ingredients. In a medium bowl, whisk together the cocoa powder, sugar, cornstarch, and salt until fully combined.
- In a saucepan over medium heat, add the dry mixture and gradually whisk in the milk, stirring constantly until smooth.
- Heat the mixture until it begins to thicken, about 5-7 minutes, until it coats the back of a spoon.
- Beat the egg yolks in a bowl. Once thickened, temper the eggs by whisking in a small amount of the hot mixture, then gradually add this back into the saucepan.
- Continue cooking for another 2-3 minutes. Remove from heat and stir in the vanilla extract.
- Pour the pudding into serving dishes or a large bowl, covering with plastic wrap pressed onto the surface to avoid a skin forming.
- Chill for at least two hours before serving, topped with whipped cream or chocolate shavings.
Notes
For a richer flavor, consider adding a splash of espresso during cooking. Adjust cornstarch for a thicker consistency.
