Instructions
- Preheat your oven to 200°F (90°C) and line a baking sheet with parchment paper.

- Increase speed to high and gradually add the granulated sugar, one tablespoon at a time, until stiff peaks form (about 5-7 minutes).
- Sift in the cocoa powder and gently fold in with a spatula. Add the vanilla extract.
- Dollop or pipe the meringue onto the baking sheet, forming round shapes.
- Bake for 1.5 hours until dry and easily lift from the paper.
- Turn off the oven and leave cookies inside for an additional 30 minutes to continue drying out.
- Store in an airtight container for up to a week.
