Description

Indulgent yet wholesome chocolate chip zucchini bars that are moist, tender, and perfect for potlucks.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg (optional)
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1/2 cup vegetable oil (or 1/3 cup melted butter + 2 tablespoons oil)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini, squeezed to remove excess water
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper and lightly grease.
  2. Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  3. In another bowl, beat the sugars with eggs until glossy, then whisk in oil and vanilla.
  4. Stir the dry ingredients into the wet until just combined, then fold in the zucchini and chocolate chips.
  5. Transfer the batter to the pan and smooth the top. Bake for 25–30 minutes until a toothpick inserted comes out with moist crumbs. Cool in the pan for 15 minutes before transferring to a rack to cool completely before slicing.

Notes

For a gluten-free option, use a cup-for-cup gluten-free flour blend. Store leftovers in an airtight container at room temperature for up to two days.
