- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 tablespoons ground coffee
- 2 tablespoons unsweetened cocoa powder (optional)
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 cup milk
- ½ cup unsalted butter (melted) or vegetable oil
- 1 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cocoa powder, and ground coffee until combined.
- In another bowl, beat together the granulated and brown sugars with the melted butter (or oil) until smooth. Add the eggs one at a time, mixing until just combined. Pour in the milk and stir gently.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined; it’s okay if there are a few lumps.
- Gently fold in the chocolate chips.
- Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
Notes
For extra flavor, consider adding a splash of vanilla extract or a sprinkle of cinnamon. Adjust the sugar for a sweeter muffin.
