Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons ground coffee
  • 2 tablespoons unsweetened cocoa powder (optional)
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 cup milk
  • ½ cup unsalted butter (melted) or vegetable oil
  • 1 cup chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cocoa powder, and ground coffee until combined.
  3. In another bowl, beat together the granulated and brown sugars with the melted butter (or oil) until smooth. Add the eggs one at a time, mixing until just combined. Pour in the milk and stir gently.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined; it’s okay if there are a few lumps.
  5. Gently fold in the chocolate chips.
  6. Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

For extra flavor, consider adding a splash of vanilla extract or a sprinkle of cinnamon. Adjust the sugar for a sweeter muffin.
