- 2 Boneless, skinless chicken breasts
- 12 oz Cheese tortellini (fresh or frozen)
- 8 oz Baby bella mushrooms, sliced
- 2 cloves Garlic, diced
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1/2 cup Grated Parmesan cheese
- 1 tsp Dried basil
- 1 tsp Dried oregano
- 1 tsp Dried thyme
Instructions
- Clean the mushrooms and slice them. Dice the garlic finely.
- Place chicken breasts at the bottom of the CrockPot. Spread sliced mushrooms and garlic over the chicken.
- Pour chicken broth to cover the chicken and sprinkle in the herbs evenly.
- Cook on low for 6-7 hours or until the chicken is tender.
- In the last 30 minutes, stir in the cheese tortellini and heavy cream.
- Before serving, sprinkle Parmesan cheese on top.
Notes
For added nutrition, consider swapping chicken for turkey or adding spinach. Be careful with timing to prevent tortellini from overcooking.
