Ingredients

  • 2 Boneless, skinless chicken breasts
  • 12 oz Cheese tortellini (fresh or frozen)
  • 8 oz Baby bella mushrooms, sliced
  • 2 cloves Garlic, diced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme

Instructions

  1. Clean the mushrooms and slice them. Dice the garlic finely.
  2. Place chicken breasts at the bottom of the CrockPot. Spread sliced mushrooms and garlic over the chicken.
  3. Pour chicken broth to cover the chicken and sprinkle in the herbs evenly.
  4. Cook on low for 6-7 hours or until the chicken is tender.
  5. In the last 30 minutes, stir in the cheese tortellini and heavy cream.
  6. Before serving, sprinkle Parmesan cheese on top.

Notes

For added nutrition, consider swapping chicken for turkey or adding spinach. Be careful with timing to prevent tortellini from overcooking.
