- 1 pound chicken sausage
- 2 cups fresh broccoli, chopped
- 1 cup orzo pasta
- 2 cloves garlic, minced
- 1 small onion, finely diced
- 4 cups chicken broth
- 1/2 cup cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Herbs (rosemary or thyme) for garnish
- Parmesan cheese, for serving
Instructions
- Chop the broccoli into bite-sized pieces, mince the garlic, and finely dice the onion.
- In a large skillet, heat olive oil over medium heat. Cook the chicken sausage until browned and cooked through.
- Add the onion and garlic, stirring until fragrant (about 2-3 minutes).
- Add the broccoli and cook for an additional 2-3 minutes until slightly tender.
- Stir in the orzo and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until the orzo is al dente (about 10-12 minutes).
- Stir in the cream and season with salt, pepper, and herbs.
- Serve warm topped with freshly grated Parmesan and extra herbs.
Notes
For a lighter option, substitute cream with white wine or lower-fat alternatives. Adjust the amount of broth for desired creaminess.
