Ingredients

  • Chicken breasts, boneless and skinless
  • Pasta (fettuccine, penne, or spaghetti)
  • Mozzarella cheese, fresh or shredded
  • Olive oil
  • Garlic, minced
  • Tomato sauce
  • Mushrooms, button or cremini
  • Fresh basil
  • Fresh parsley
  • Salt and black pepper

Instructions

  1. Cook the Pasta: Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
  3. Prepare the Sauce: In the same skillet, add a touch more olive oil if needed, then toss in minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until fragrant and tender.
  4. Combine the Ingredients: Lower the heat and add the cooked tomato sauce to the skillet, stirring to combine. Add the drained pasta, sliced chicken, and about half of the pasta water, mixing everything well. If needed, adjust the sauce’s consistency with more pasta water.
  5. Add Mozzarella: Stir in the mozzarella cheese until melted and gooey.
  6. Garnish and Serve: Remove from heat, sprinkle with fresh herbs, and serve immediately with extra grated cheese if desired.

Notes

For a touch of elegance, drizzle with a dash of balsamic glaze before serving.
