- 8 oz pasta (spaghetti or fettuccine)
- 1 lb boneless, skinless chicken breast
- 4 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp butter
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 8 oz mushrooms, sliced
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook the pasta until al dente. Reserve one cup of pasta water, then drain and set aside.
- Sauté Garlic and Chicken: In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add chicken and season with salt and pepper. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
- Cook the Mushrooms: In the same skillet, add sliced mushrooms and sauté until browned and softened, about 5 minutes.
- Combine Ingredients: Slice the cooked chicken into bite-sized pieces and return it to the skillet. Add the cooked pasta and gradually pour in the reserved pasta water. Stir to combine.
- Add Cheese and Herbs: Stir in Parmesan cheese and chopped parsley. Adjust seasoning to taste.
- Serve: Plate the dish, sprinkle with extra cheese and herbs, and drizzle with olive oil before serving.
Notes
For a richer sauce, add a splash of cream or a dollop of sour cream. You can add red pepper flakes for heat or lemon zest for brightness.
