- 4 Boneless, skinless chicken breasts
- 1 cup All-purpose flour
- 2 Eggs
- 1 cup Panko breadcrumbs
- 1 tsp Italian seasoning
- Salt and pepper to taste

Instructions
- Flatten the chicken breasts to about half an inch thick with a meat mallet.
- Set up a breading station with seasoned flour, beaten eggs, and breadcrumbs mixed with extra seasoning.
- Coat chicken in the seasoned flour, dip in the egg, then coat with breadcrumbs.
- Heat oil in a skillet over medium-high heat. Sizzle a breadcrumb to test the oil.
- Cook cutlets for 4-5 minutes on each side until golden brown and cooked through.
- Transfer cooked cutlets to a paper towel-lined plate to rest for a couple of minutes before serving.
Notes
For added flavor, marinate chicken in buttermilk for a few hours before cooking. Ensure oil temperature is steady for crispy cutlets.
