- 1 lb boneless, skinless chicken breasts or thighs
- 8 oz fresh cremini or button mushrooms, sliced
- 2 cups carrots and peas mixed
- 2 tbsp fresh thyme, chopped (or 1 tbsp dried)
- 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream or a mix of chicken broth and sour cream
- 1 package homemade or store-bought ready-to-bake biscuits
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 8-10 minutes. Set aside.
- In the same skillet, sauté onions and garlic until softened. Add mushrooms, carrots, and peas, cooking until tender.
- Stir in heavy cream and any additional broth, add thyme, parsley, and adjust seasoning. Simmer until slightly thickened.
- Return chicken to the skillet and mix with vegetables and sauce. Transfer to a greased baking dish.
- Top with biscuit dough, spacing evenly.
- Bake for 25-30 minutes, or until biscuits are golden brown. Broil for an additional 1-2 minutes if needed.
- Let cool slightly before serving.
