Ingredients

- Fresh or frozen tortellini
- 1 can (28 oz) crushed tomatoes
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or half-and-half
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 teaspoon dried oregano
- 1 cup grated Parmesan cheese
- Salt and cracked black pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until onions are translucent.
- Stir in the canned crushed tomatoes, followed by the broth of your choice. Bring mixture to a gentle simmer.
- Once simmering, reduce heat and stir in the cream.
- Add tortellini to the pot. Cook for 3-5 minutes, or until they float to the surface.
- Toss in fresh herbs and grated Parmesan cheese. Stir until cheese melts into the soup.
- Season with salt and pepper to taste. Optionally, sprinkle more cheese on top before serving.
- Ladle soup into bowls and add a final sprinkle of fresh herbs and cheese.
Notes
Serve with crusty garlic bread or a fresh green salad. Can add a drizzle of pesto or a sprinkle of red pepper flakes for extra flavor.
