Ingredients

  • 4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 ¼ cups warm water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2/3 cup baking soda
  • 8 ounces mozzarella cheese (cut into 1-ounce pieces)
  • ¼ cup unsalted butter (melted)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine the yeast and warm water. Let it sit for 5 minutes until frothy.
  2. Add flour, sugar, and salt, mix the dough until it comes together, and knead for about 5 minutes.
  3. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour until doubled in size.
  4. Preheat the oven to 450°F (230°C). Punch down the dough and divide it into 8 equal portions.
  5. Roll each piece into a 24-inch rope, forming a U-shape and twist the ends together.
  6. Place a mozzarella piece in the center and finish shaping the pretzel.
  7. Boil 10 cups of water with baking soda. Boil each pretzel for 30 seconds, then place on a parchment-lined baking sheet.
  8. Brush with an egg wash and sprinkle with sea salt.
  9. Bake for 12-15 minutes until golden brown. Let cool before serving.

Notes

Experiment with different cheeses or spices for extra flavor. Serve with marinara or mustard for dipping.
