Ingredients
- Fresh cheese tortellini (about 9 ounces)
- Cooked chicken breast, shredded or diced (1 cup)
- Cream cheese (4 ounces)
- Shredded mozzarella cheese (1 cup)
- Italian seasoning (1 teaspoon)
- Fresh parsley, chopped (for garnish)
- Garlic, minced (2 cloves)
- Chicken broth (1 cup)
- Olive oil (2 tablespoons)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- In a mixing bowl, combine cream cheese, chicken broth, Italian seasoning, salt, and pepper. Stir until smooth. Add in the cooked chicken and cheese tortellini, mixing until well-coated.
- Transfer the mixture to a greased, small baking dish. Top with shredded mozzarella cheese. Bake uncovered for about 25-30 minutes, or until bubbly and golden on top.
- Remove from the oven, let it cool slightly, and garnish with fresh parsley before serving.
Notes
For extra depth of flavor, consider adding sautéed mushrooms or spinach to the mixture before baking. Avoid overcooking the tortellini to prevent mushiness.
