Ingredients
- Medium-sized pasta (penne, fusilli, or rotini)
- Boneless, skinless chicken breasts or thighs
- Mozzarella cheese
- Sharp cheddar cheese
- Heavy cream (or sour cream/Greek yogurt)
- Sautéed mushrooms, spinach, or bell peppers
- Fresh garlic
- Dried oregano
- Dried basil
- Salt and pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot of salted boiling water, cook pasta until just al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil. Season chicken with salt and pepper, cook until golden, then dice into bite-sized pieces.
- In the same skillet, sauté garlic until fragrant. Add heavy cream and simmer. Gradually stir in cheeses until melted and creamy, then add herbs, salt, and pepper.
- In a bowl, combine cooked pasta, diced chicken, sautéed vegetables, and cheesy sauce. Mix well.
- Transfer to a greased baking dish, sprinkle extra cheese on top, and bake for 25-30 minutes until bubbly and golden brown.
- Let it rest before serving; enjoy with a salad and a glass of white wine.
Notes
This recipe is forgiving; feel free to broil for the last few minutes to enhance the crust.
