Ingredients

  • Medium-sized pasta (penne, fusilli, or rotini)
  • Boneless, skinless chicken breasts or thighs
  • Mozzarella cheese
  • Sharp cheddar cheese
  • Heavy cream (or sour cream/Greek yogurt)
  • Sautéed mushrooms, spinach, or bell peppers
  • Fresh garlic
  • Dried oregano
  • Dried basil
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot of salted boiling water, cook pasta until just al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil. Season chicken with salt and pepper, cook until golden, then dice into bite-sized pieces.
  4. In the same skillet, sauté garlic until fragrant. Add heavy cream and simmer. Gradually stir in cheeses until melted and creamy, then add herbs, salt, and pepper.
  5. In a bowl, combine cooked pasta, diced chicken, sautéed vegetables, and cheesy sauce. Mix well.
  6. Transfer to a greased baking dish, sprinkle extra cheese on top, and bake for 25-30 minutes until bubbly and golden brown.
  7. Let it rest before serving; enjoy with a salad and a glass of white wine.

Notes

This recipe is forgiving; feel free to broil for the last few minutes to enhance the crust.
