- 1 boneless, skinless chicken breast
- 1 ripe avocado
- Cheese (cheddar, mozzarella, or pepper jack)
- Bread (sourdough or ciabatta)
- Butter (for toasting)
- 1 cup sliced mushrooms (baby bella or white button)
- 2 cloves fresh garlic (minced)
- Fresh herbs (basil or cilantro)
Instructions
- Season chicken breasts with salt, pepper, and herbs. Grill or pan-sear until cooked through, about 6-7 minutes per side. Let rest before slicing.
- Sauté mushrooms and garlic in the same skillet until caramelized, about 5-7 minutes.
- Spread butter on the outsides of the bread slices and toast in the skillet until golden brown.
- Layer toasted bread with sliced chicken, sautéed mushrooms, avocado, and cheese.
- Top with another slice of bread and press gently. Cook for 2-3 minutes on each side until cheese is melted.
Notes
Don’t rush the melting process for perfectly gooey cheese! Feel free to add toppings like fresh spinach or tomatoes.
