- 8 oz elbow macaroni or rotini
- 1 lb lean ground beef
- 1 cup sharp cheddar cheese, shredded
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp Dijon mustard
- 1 cup tomato sauce or cream
- 1/2 cup pickles, chopped
- Fresh herbs (parsley or chives) for garnish
Instructions
- Boil water in a large pot and add a pinch of salt. Cook the pasta according to package instructions until al dente, reserving 1 cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium-high heat. Sauté onions until translucent, then add garlic, cooking until fragrant.
- Add the ground beef, breaking it apart and seasoning with salt and pepper. Cook until browned.
- Stir in Dijon mustard and tomato sauce or cream. Simmer, adding reserved pasta water as needed for desired sauce consistency.
- Toss the drained pasta into the skillet, coating the noodles in the sauce, and mix in the cheddar cheese until melted.
- Fold in chopped pickles and garnish with fresh herbs before serving.
- Plate and enjoy warm. Consider serving with a side salad or garlic bread.
Notes
For added flavor, try browning the beef with Worcestershire sauce. Let flavors meld before serving for maximum delight.
