A comforting and creamy potato soup with rich cheddar, garlic, and herbs.
Ingredients

- 4 large Yukon Gold potatoes, peeled and cubed
- 2 cups sharp cheddar cheese, shredded
- 4 garlic cloves, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic, stirring until fragrant, about 1 minute.
- Add cubed potatoes, chicken broth, and salt. Bring to a gentle boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Carefully blend half of the soup using an immersion blender, or transfer to a traditional blender in batches. Blend until smooth and return to the pot.
- Stir in heavy cream and cheddar cheese. Continue to heat on low until the cheese is melted. Add thyme, stirring gently to incorporate.
- Add additional salt and pepper if necessary. For a deeper flavor, let the soup sit off heat for a few minutes before serving.
