Ingredients

  • 4 large Yukon Gold potatoes, peeled and cubed
  • 2 cups sharp cheddar cheese, shredded
  • 4 garlic cloves, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic, stirring until fragrant, about 1 minute.
  2. Add cubed potatoes, chicken broth, and salt. Bring to a gentle boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Carefully blend half of the soup using an immersion blender, or transfer to a traditional blender in batches. Blend until smooth and return to the pot.
  4. Stir in heavy cream and cheddar cheese. Continue to heat on low until the cheese is melted. Add thyme, stirring gently to incorporate.
  5. Add additional salt and pepper if necessary. For a deeper flavor, let the soup sit off heat for a few minutes before serving.
