Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, stirring until they become soft and translucent, about 5 minutes.
  2. Stir in sliced carrots and grated ginger. Let them cook for another 5-7 minutes until the carrots begin to soften.
  3. Add your broth of choice, bringing the mixture to a gentle boil. Reduce heat and simmer for about 20 minutes, until the carrots are tender.
  4. Using an immersion blender, puree the soup until smooth. If using a traditional blender, allow the soup to cool slightly before blending in batches.
  5. Stir in the cream or coconut milk, mixing well to combine. Simmer for an additional 5-10 minutes. Season with salt and pepper to taste.

Notes

For a lighter version, use Greek yogurt instead of cream. Add a splash of apple cider vinegar or a pinch of nutmeg for more depth.
